Cooking outdoors is a big part of the camping fun, but a small trailer kitchen has limits. Counter space is tight, the fridge only holds so much, and nobody wants to spend the first evening of a vacation chopping vegetables in a cramped galley.
The easy fix is to do the work at home. Cook, assemble and freeze before you leave, and at camp the job is just heating things up and eating.

You’ll need:
To make: Combine everything in a mason jar and refrigerate overnight. Make one jar per person, and breakfast is ready when you wake up, with no stove and no dishes beyond a spoon.
You’ll need:
To make: Cook the pasta, rinse it in cold water, and toss it with everything else. This is one of the few meals that gets better the next day, so make it for your first lunch at camp.
Tip: A vinaigrette holds up in a cooler better than a creamy dressing.
Taco night
Brown 2 lbs of ground beef with taco seasoning, drain it, and let it cool. Freeze it flat in a zip bag. At camp, thaw it in the cooler and reheat it in a skillet with a splash of water. Set out tortillas, shredded cheese and toppings, and everyone builds their own. It’s fast, hard to mess up, and kids and grandparents both like it.
Big-pot chili
Make a full pot at home, cool it, and freeze it in flat bags. The frozen bags help keep the cooler cold on the way up, then thaw by the time you need dinner. Reheat on the stove until it’s steaming.
Foil packets
If you want a no-stove dinner, try foil packets of potatoes, vegetables and sausage or chicken. You’ll find our favorite version in our guide to staying cool in your camper.
